Ingredients

4 lean pork loin steaks, fat removed or 4 shoulder steaks, cut into thin strips
1 tablespoon cornflour
2 tablespoons oil
For the sauce
4 tablespoons sweet chilli sauce
3 tablespoons reduced salt soy sauce
2 tablespoons tomato purée
300ml water
To garnish
Small bunch spring onions, finely chopped

Method

Step 1

To prepare the sauce, in a medium bowl mix all the ingredients together and set aside. 

Step 2

Pat the pork strips dry with absorbent kitchen paper and transfer to a large bowl. 

Step 3

Season, add the cornflour and toss gently. 

Step 4

Heat half the oil in a non-stick frying pan or wok and stir fry half the pork strips over high heat until lightly golden for 3-4 minutes until the strips are cooked through, tossing occasionallyRemove from the pan and set aside on a large plate. 

Step 5

Add the remaining oil to the pan and repeat with the remaining pork stripsRemove transfer to the plate with the pork. 

Step 6

Add sauce ingredients to the pan and heat over medium heat for 10 minutes or until the sauce starts to thicken. 

Step 7

Reduce the heat and return the pork strips to the pan, toss in the sauce and heat for 1-2 minutes or until the pork is piping hot. 

Step 8

Garnish with the spring onions and serve with sticky rice and seasonal vegetables or vegetable stir-fry noodles.
