Pulled Pork Nachos

Possibly the tastiest Friday night sharing dish to chill out in front of the TV with. Plus, they’re made using leftover pulled pork, so only take ten minutes to make – enjoy!

Ingredients

300g prepared pulled pork
1 x 200g pack tortilla chips
100g grated cheese of your choice (e.g Mozzarella or Cheddar)
1 small red onion, peeled and finely chopped
½ jar prepared sliced jalapeno peppers, optional
To serve
Sour cream
Fresh coriander leaves
Prepared guacamole

Method

Step 1

Preheat the oven to 190°C, 170°C Fan, Gas Mark 5.

Step 2

Scatter half the tortillas over a large ovenproof dish lined with baking parchment or foil. Top with half the cheese. Repeat with another layer of the tortillas and scatter over the pork in a single layer, followed by the onions, jalapenos and the remaining cheese.

Step 3

Cook in the oven for 8-10 minutes, or until the cheese melts and the pork is piping hot throughout.

Step 4

Remove the nachos from the oven. Garnish with extra BBQ sauce or sour cream, fresh coriander leaves and serve immediately with prepared guacamole and coleslaw.
