Pork Leg Roast with Apples

Indulge in the ultimate comfort food with this crackling pork leg roast with apples. Perfect for a special occasion or a cosy family dinner, this recipe combines the succulent flavours of a tender pork leg joint with the sweet and tangy notes of roasted seasonal apples.

Ingredients

1.4kg boneless rolled pork crackling leg or loin joint
Salt and pepper
2 teaspoons oil
4 dessert apples
Juice of ½ lemon

Method

Step 1

Remove the joint from the fridge at least 30 minutes before cooking, to bring up to room temperature.

Step 2

Put the joint on a clean chopping board and dry the rind with kitchen paper and score with a sharp knife. Season generously all over then rub with joint with the oil and additional salt over the fat.

Step 3

Preheat the oven to 220°C, 200°C Fan, Gas Mark 7.

Step 4

Weight the joint and calculate the cooking time (30mins per 450g plus 30 mins).

Step 5

Transfer the joint to a non-stick roasting tin and roast uncovered for 20 minutes.

Step 6

Reduce the oven temperature to 180°C, 160°C Fan, Gas Mark 4. Continue to cook the joint for 1 hour (or calculate the cooking time according to the weight of your joint).

Step 7

Meanwhile, prepare the apples, core and cut each apple into quarters. Drizzle over the lemon juice.

Step 8

Remove the joint from the oven, arrange the apples around the joint, return to the oven and cook the joint with the apples for a further 20 minutes.

Step 9

Remove the joint from the oven. Cover and rest for 10-20 minutes. The internal temperature should now read 75°C and above.

Step 10

Carve with joint and serve with accompaniments of your choice (such as roasties, Yorkshires, and stuffing.
