Ingredients

1 x 500g pack lean pork mince (5% fat)
2 teaspoons oil
1 onion, peeled and chopped
1 red pepper, deseeded and chopped
2 garlic cloves, peeled and finely crushed, or 1 teaspoon garlic purée
2 teaspoons smoked or ground paprika
1 teaspoon ground cumin
1 teaspoon chilli powder of your choice
1 teaspoon dried mixed herbs
1 x 400g can chopped tomatoes
1 x 400g can beans of your choice (red kidney, black, pinto), retain the water from the can
1 large sweet potato, peeled and cut into 1cm cubes, or 400g (or 1 medium) butternut squash, peeled, deseeded and cut into 1cm cubes
To garnish
2 tablespoons freshly chopped coriander (optional)
Lime wedges (optional)

Method

Step 1

Heat the oil in a large non-stick pan with a lid. Add the onion and pepper. Reduce the heat and cook for 2-3 minutes, or until soft. Add the mince and garlic. Cook for 2-3 minutes, stirring frequently, breaking up mince with the back of a spoon. 

Step 2

Add the spices and dried mixed herbs. Cook for a further 1-2 minutes. 

Step 3

Add the tomatoes, beans and sweet potato or butternut squash. Season to taste and bring to the boil. Reduce the heat, cover and simmer for 20 minutes, stirring occasionally. 

Step 4

Garnish with the herbs and lime wedges, if used and serve with rice. 

Tips and Serving Suggestions

If preferred, adjust the spices to suit your family or friends or replace the sweet potatoes with butternut squash or carrots.
