One Pan Pesto Pork Pasta

Ingredients

4 lean pork loin steaks, fat removed or 4 pork shoulder steaks, cut into 1cm strips
150g frozen or fresh broccoli florets
1 x 190g jar prepared pesto (red or green)
250g dried pasta shapes, e.g. penne or twists
600ml hot water
25g hard cheese, grated (we used Cheddar)

Method

Step 1

Season the pork strips and transfer to a large non-stick lidded heatproof pan. 

Step 2

Add the broccoli, half the pesto, pasta shapes and water. Stir gently to incorporate and bring to the boil. 

Step 3

Cover, reduce the heat and simmer gently for 15-20 minutes, or until the liquid is absorbed and the pasta is cooked. Stir through the remaining pesto. 

Step 4

Sprinkle over the cheese. Pop under a preheated moderate grill for 2-3 minutes, or until the cheese is melted.  

Step 5

Set aside and leave to stand for 2-3 minutes before serving with a seasonal salad and crusty bread.
