Korean-Style Pork Mince Bowl

Ingredients

1 x 500g pack lean pork mince (5% fat)
2 teaspoons oil
1 teaspoon garlic purée or 1 large garlic clove, peeled and finely crushed
1 teaspoon ginger purée or 1 x 2.5cm piece fresh ginger, peeled and finely chopped
For the Sauce
3 tablespoons gochujang or chilli paste
2 teaspoons reduce salt soy sauce
2 teaspoons white wine or rice vinegar
2 teaspoons honey
100ml water
1 tablespoon cornflour or plain flour
For the Noodles
1 x 300-320g pack stir-fry vegetables of your choice
1 x 300g pack fresh egg noodles
To serve
4 eggs, fried, optional
2 teaspoons toasted sesame seeds, optional
2 spring onions, finely chopped, optional

Method

Step 1

In a small bowl mix the sauce ingredients together. 

Step 2

Heat the half the oil in a large non-stick pan over moderate heat and cook the pork, ginger and garlic purée for 2-3 minutes, until the meat juices run clear, stirring occasionally to break up the mince.  

Step 3

In a small bowl mix together the sauce ingredients and add to the pan with the mince, stir gently and bring to the boil, reduce the heat and simmer for 10 minutes. 

Step 4

Add the stir-fry vegetables to the pan and cook for 2-3 minutes. Meanwhile, cook the noodles according to the packet instructions and set aside. 

Step 5

If using the eggs, in a separate frying pan heat the remaining oil and fry the eggs. 

Step 6

Divide the hot noodles equally into bowls, add the stir-fry mince and vegetable mixture.  Top with a fried egg, sesame seeds and spring onions, if used, then serve.
