This creamy sausage and mushroom pasta with onions and mushrooms is a winner, especially combined with the saucy garlic, herbs, soft cheese and a pinch of chilli flakes!

Step 1
Cook the pasta according to the packet instructions, drain and reserve 3 tablespoons of the hot pasta water.
Step 2
Heat a non-stick frying pan over moderate heat and dry fry the sausage meat for 4-5 minutes until lightly brown.
Step 3
Add the onion, garlic, mushrooms and chilli flakes, if used. Cook for 2-3 minutes.
Step 4
Add the cooked pasta to the pan, stir through the soft cheese and mixed herbs or parsley and the reserved pasta water.
Step 5
Season and warm gently for a few minutes.
Step 6
Serve the pasta with a crisp green salad
