Air Fried Pork Steaks with Roasted Vegetables (Winter)

A perfect blend of sweet and savoury that features Cajun-seasoned pork fillet, paired with sweet and savoury roasted sweet potatoes.

Step 1
Preheat oven to 180°C, 160°C Fan, Gas Mark 4. Place the fillet on a baking tray. Sprinkle over the Cajun spice mix and rub all over the fillet. Cook in the oven for 25-30 minutes.
Step 2
Meanwhile boil the potatoes in a large pan of water for 10-15 minutes until softened. Drain and mash then stir through the spring onions, and yogurt. Season well with black pepper.
Step 3
During the last 15 minutes of cooking time place pineapple rings onto a baking tray and drizzle over the honey. Place on the baking tray alongside pork fillet and cook for remaining 15 minutes of cooking time.
Step 4
Cut the pork fillet cut into slices and some with the sweet potato mash, roasted pineapple and extra steamed green vegetables.
