All Day Breakfast Burger by Nathan Bates

This banging All Day Breakfast Burger, homemade chips and a chipotle mayo uses 5% fat pork mince which takes on flavours well and ideal for sharing with friends and family.

Cooking Skill: Not Too Tricky

Ingredients

500g pork mince (5% fat)
4 large potatoes
2 tablespoons oil
2 teaspoons salt
2 teaspoons black pepper
8 tablespoons light mayonnaise
2 tablespoons chipotle paste
8 rashers smoked bacon
4 brioche buns (pre-sliced)
4 eggs

Method

Step 1

Cut the potatoes into even-sized chips, toss in half of the oil, salt and pepper. Place the chips into a preheated fan oven at 180°C and cook for 30 minutes.

Step 2

Season the pork mince with salt and pepper. Split into 4 equal- sized balls ready to cook.

Step 3

Take a small bowl, mix together the light mayo and chipotle paste and set aside for later. 

Step 4

Over a medium heat, place your seasoned pork into a pan and press down gently with a spatula creating a thin patty. Cook for 3-4 minutes, flip and cook for another 3 minutes until thoroughly cooked and piping hot. Repeat the process for the other three patties. 

Step 5

Remove the patties and leave to one side, place the bacon into the same pan and fry until crispy or to your liking. 

Step 6

Check your chips and turn them to ensure even cooking.

Step 7

In a separate pan, toast the brioche buns until golden brown and remove.

Step 8

Lightly oil the same pan using the remaining oil, add the eggs, season with salt and pepper and fry until soft (1 per person). 

Step 9

Now we can assemble! Take your brioche bun and add a teaspoon of chipotle mayo on each side. Layer with the pork mince patty, smoked bacon, the fried egg and top with the brioche lid.

Step 10

Serve with the chips, a side of the chipotle mayo and enjoy as the egg yolk oozes down.
