Ingredients

1 x 1.3kg lean pork roast loin, scored
2 teaspoons oil
1 teaspoon ground black pepper
2 teaspoons salt

Method

Step 1

Remove the joint from the fridge around 30 minutes before cooking to bring up to room temperature. Remove the packaging and pat dry with kitchen paper to remove any excess moisture.

Step 2

Preheat the air-fryer to 200°C for a few minutes.

Step 3

Put the joint on a chopping board and score the joint with a sharp knife (if not already).

Step 4

Rub over the oil and season generously all over with pepper and salt, paying attention to adding the salt in the score marks.

Step 5

Put the joint, skin side up in a lined air fryer basket and cook for 20 minutes. After 20 minutes, the crackling is starting to form, and the skin should be golden. Continue to cook at the same temperature for a further 60 minutes.

Step 6

When the crackling is formed and the internal temperature reads 70°C (for medium/well done), remove the joint from the air fryer and allow to rest for 10 minutes.

Step 7

Transfer to a serving plate and serve with vegetable accompaniments of your choice.
