Air Fried Pork Steaks with Roasted Vegetables (Winter)

Our succulent air fried herby pork steaks are cooked to perfection with seasonal winter vegetables for a speedy midweek meal for two.

Cook time: 15-20 mins

Ingredients

2 lean pork loin steaks, trimmed of fat
Salt and pepper
1 teaspoon garlic powder
½ teaspoon dried mixed herbs
2 teaspoons oil
80g small parsnips, peeled and cut in half, or cut into small cubes or diced
80g small or baby carrots, halved lengthways
80g butternut squash or sweet potatoes, peeled, deseeded (if using butternut squash) and cut into small cubes or diced
1 medium red onion, peeled and cut into quarters
To serve: Prepared gravy, optional

Method

Step 1

Preheat the air fryer to 190°C for a few minutes. 

Step 2

In a small bowl mix together the salt, pepper, seasonings and oil. 

Step 3

Rub the steaks with half the seasoning mix on both sidesPlace the steaks in the air fryer and cook for 5-6 minutes. 

Step 4

Whilst the steaks are cooking, in a medium bowl toss the vegetables in the remaining spice mix.

Step 5

Turn the steaks over in the air fryer and spoon the vegetables around the steaksContinue to cook for a further 10-15 minutes or until the pork is cooked and the vegetables are tender, shaking the basket from time to time. 

Step 6

Rest the steaks for a few minutes and serve with the vegetables and any meat juices or prepared gravy, optional.
