Flavoursome and versatile boneless belly slices come from the belly of the pig and resembles thick-cut bacon.  Belly slices are sold fresh and uncured (not smoked, dried or salted).

Spare ribs can come from either the loin or belly area and are what is left after the loin and belly have been removed.

Baby back ribs

These are a type of pork rib that is taken from the upper back of the carcass, where the ribs meet the spine after the loin is removed.  They are shorter in relation to spare ribs, but lean and tender.  Great cooked in the air fryer, grilled, roasted or on the BBQ.

Streaky bacon

A cut prepared from cured pork belly with layers of fat running throughout. Streak bacon is often called belly strips.

Ideally, streaky bacon should be grilled or dry-fried in a hot pan, but it is also tasty when boiled, pressed (from a bacon joint?)and eaten cold, the perfect sandwich filler! Streaky bacon is especially good value for money.
