Smoky Pork Mince Tacos

A firm Mexican favourite featuring lean pork mince that is quick, full of flavour and on the table in 10 minutes!

Ingredients

500g lean pork mince (5% fat)
2 teaspoons oil
2 teaspoons smoked or ground paprika
2 teaspoons ground cumin
1 teaspoon garlic granules
12 crunchy taco shells
To serve:
100g shredded iceberg lettuce
50g freshly chopped tomatoes
50g fresh cucumber, diced
125g pot low fat yogurt, sour cream or mayonnaise
½ teaspoon dried chilli flakes, optional
Large handful fresh coriander leaves
1 x 150g pot prepared tomato salsa, optional
Lime wedges
Prepared coleslaw, optional

Method

Step 1

Heat the oil in a large non-stick pan over moderate heatAdd the pork mince, spices and garlic granulesCook for 8-10 minutes, or until the mince is brown, stirring occasionally and breaking up the mince with the back of a wooden spoon.  

Step 2

Meanwhile, put the side ingredients and relishes into separate bowls and dishes. 

Step 3

Warm the tacos according to the packet instructions. 

Step 4

Arrange the tacos onto a large plate or on taco holdersTransfer the pork mince to large warm plate and build your tacos according to your liking.
