Air-Fried Pork Steaks with Roasted Vegetables (Summer)

This flavoursome midweek meal features juicy, herby pork loin steaks and a medley of summer vegetables that’s ready in 20 minutes with minimal fuss and washing up.

Ingredients

2 lean pork loin steaks, trimmed of fat
Salt and pepper
1 teaspoon garlic powder
½ teaspoon dried mixed herbs
2 teaspoons oil
80g small baby new potatoes, cut in half or quartered
80g red peppers, cored deseeded and cut into large cubes
80g yellow peppers, cored deseeded and cut into large cubes
80g courgettes, cut into large cubes
6 cherry tomatoes, optional
1 medium red onion, peeled and quartered

Method

Step 1

Preheat the air fryer to 190°C for a few minutes. 

Step 2

In a small bowl mix together the salt, pepper, seasonings and oil. 

Step 3

Rub the steaks with half the seasoning mix on both sidesPlace the steaks in the air fryer with the potatoes and cook for 5-6 minutes. 

Step 4

Whilst the steaks are cooking, in a medium bowl toss the remaining vegetables in the remaining spice mix. 

Step 5

Turn the steaks over in the air fryer and spoon the remaining vegetables around the steaks.  Continue to cook for a further 10-15 minutes, or until the pork is cooked and the vegetables are tender, shaking the basket from time to time.

Step 6

Rest the steaks for a few minutes and serve with the vegetables and any meat juices.
