Elevate your recipe repertoire with this glazed air fryer gammon that cooks in under an hour.
This recipe brings out the best in gammon, combining a sweet and tangy glaze made with a blend of honey, mustard, and spices, adding a depth of flavour that will have everyone coming back for seconds.

Step 1
Remove the gammon from the fridge around 30 minutes before cooking to bring up to room temperature.
Step 2
For the glaze, in a small bowl, mix together the cranberry sauce or redcurrant jelly, mustard (if used) and orange juice then set aside. Position the joint on a large square piece of foil on a chopping board. Brush the joint all over with the glaze (reserve the remaining glaze for later) and wrap loosely with foil.
Step 3
Preheat the air-fryer to 160°C for a few minutes. Put the gammon into a lined air fryer and cook for 50-60 minutes, brushing with the remaining glaze halfway through. Remove the joint from the air-fryer. The gammon is cooked through once the centre of the joint reads 70°C (use a digital thermometer). With a sharp knife remove the rind from the joint, leaving a thin layer of fat. Score the fat all over in a diamond pattern (at this stage you can insert dried cloves into each diamond if you like)
Step 4
Brush the gammon with the remaining glaze. Increase the air fryer temperature to 180°C, return the gammon to the air fryer and cool for a further 10-15 minutes, until the glaze is caramelised.
Step 5
Transfer to a serving plate and rest for 10 minutes. Serve hot or cold with a selection of relishes, rolls or a side salad. If you prefer, serve with roasties and seasonal vegetables of your choice.
Use any leftover gammon in sandwiches or in a soup, such as pea and ham.
Traditional roasting instructions:
Put the gammon in a large pan, cover with cold water. Bring to the boil, reduce the heat, cover and simmer for 20mins per 500g. Remove from the pan and cook for 15mins (the cooking liquid can be used to make a soup). Preheat the oven to 200°C,180°C Fan, Gas Mark 6. Brush half the joint with the glaze, cover with foil and cook for 10 mins. Remove foil, rotate the joint in the tin, brush with the remaining glaze and return to the oven uncovered to cook for a further 20 minutes.
Slow cooker instructions:
Cook on HIGH for 4-6 hours.
