Tasty Pork Quesadillas

These quesadillas are a breeze to make, using leftover cooked pork and air fried to crispy perfection. Ready in just 15 minutes, they’re a delicious and convenient option for busy days.

Ingredients

150g leftover cooked pork, shredded
3 tablespoons mayonnaise
1 tablespoon chipotle paste
Spray oil
80g grated cheese
4 flour tortillas
½ small onion, peeled and finely diced
1 small red, yellow or green pepper, deseeded and diced

Method

Step 1

In a large bowl mix the pork, mayonnaise and chipotle paste together. Season with salt and pepper, if required. 

Step 2

Spray one side of each tortilla with oil and carefully flip over. 

Step 3

Sprinkle the cheese evenly over the base of each tortilla. Add the onion, pepper and pork mix. Preheat the air fryer to 180°C. 

Step 4

Fold the quesadilla in half and transfer 1 or 2 quesadillas to the base of the air fryer (depending on the size).  Position the metal trivet on top to seal the tortillas during cooking. 

Step 5

Cook in batches for 8 minutes, then serve.
