Pork, Cheese and Pickle Sausage Rolls

These air fryer pork mince sausage rolls with cheese and pickle can be on your table in 30 minutes and are great for the whole family!

They can also be cooked from frozen, going straight into the air fryer whenever you have a quick snack, sausage roll craving!

Prep time: 15 mins

Ingredients

250g lean pork mince (5% fat)
1 tablespoon dried mixed herbs
1-2 teaspoons garlic purée or paste
2 tablespoons sweet sandwich pickle or similar
100g grated hard cheese, e.g. Cheddar
Plain flour, for dusting
1 x 320g pack ready rolled puff pastry
Spray oil
1 egg, beaten
2 tablespoons sesame seeds or black onion seeds, optional

Method

Step 1

 Put the pork, dried herbs, garlic purée, pickle and grated cheese in a large bowl. Season with salt and pepper, then mix and set aside. 

Step 2

Unroll the pastry on a lightly floured surface, remove the parchment paper and lay the pastry flat

Step 3

Roll the pastry out into a large rectangle then cut in half horizontally to form two long rectangles. Mould half the pork mix onto one of the pastry rectangles into a sausage shape, to reach both ends of the pastry rectangle. Trim the excess pastry with a sharp knife. Repeat with the remaining pork mix and pastry rectangle. 

Step 4

Brush each of the pastry edges with little cold water. Fold the pastry over the sausage logs. Crimp the edges of the pastry with a fork to sea then cut into pieces. Preheat the air fryer to 200°C for a few minutes, then spray the air fryer trivet with oil. 

Step 5

Brush the pastry all over with the beaten egg and sprinkle with the sesame or black onion seeds (if used). 

Step 6

Position the pork rolls evenly onto the air fryer trivet. Do not overfill the air fryer basket and cook in batches for 8-10 minutes turning once until the pastry is golden. Serve with condiments or dips of your choice. 

Tips and Serving Suggestions

Air fryers do vary so adjust the cooking time according to your appliance handbook.  

If preferred, cook the pork rolls in a preheated oven at 200°C, 180°C Fan, Gas Mark 6 for 25-30 minutes. 

The premade pork rolls freeze well for reheating as a snack in the air fryer too. Lay the pork rolls onto a lined baking tray, cover and freeze (this method stops them from sticking together). When frozen, transfer to a plastic freezer bag, label and return to the freezer. They will freeze well for up to 2-3 months. Preheat the air fryer to 200°C for a few minutes and cook the pork rolls for 20 minutes, turning once halfway during cooking, then serve.
