This quick and easy one pan pork mince pasta dish ticks all the boxes on taste, flavour and value for money.

Step 1
Heat some oil in a large casserole dish with a lid and add your pork. Fry off for 2-3 minutes until slightly coloured and then add your fennel seeds and the onion. Cook 2-3 minutes until soft and then add the tomato purée and fry until darker in colour.
Step 2
Now it’s as easy as adding (almost) everything else in! Add your tomatoes, the pasta, salt, boiling water and milk and pop on a lid. Simmer for 10 minutes with the lid on before giving a good stir and adding in the tenderstem broccoli and spinach for the final 5. If not using wholegrain pasta, reduce the liquid by 200ml and the cook time by 2 mins.

If the sauce is a little thin, bubble with the lid off until it perfectly coats the pasta. Add your Parmesan to create a glossy sauce and serve straight away with a twist of black pepper and some extra cheese!
